There was one in NWN and you can have one in NWN2, but they were not part of a dwarven monastic order. They were just that, dwarven monks. Dwarven monks are unusual, but they can join monastic orders if they so wish.

Grimgnaw in NWN 1 was a Monk of the Long Death if that is who you mean

Demihuman deities breaks down a lot of the dwarven orders if you can get your hands on a copy of it. Depending on how out of the norm you want your dwarf to be, you could have him as a member of one of the dwarven orders, or else one of the more widely covered orders that have more info about them available. I know orders like the Long Death are more for evilish types (LN & LE), so a dwarf as a member of them (being several steps from LG) would make a much better fit.

Forgive me, but I keep getting this gay mental image of Gimli from LOTR going through his Chuck Norris routines to the tune of "Everybody was Kung Fu Fighting" hehe. :lol:

Hmm, well makes me think immediately of Oghma and Dugmaren. Maybe this helps you:

Oghma
While the church of Oghma sponsor no military or knightly orders, it spreads its aegis over a countless number of monkish fellowships, scholarly orders of honor, guilds of naturalists and herbalists, and colleges of bardic knowledge. Some of these include the Children of the Passive Voice, an order of learned monks whose members protect many libraries and abbeys; the Order of the Gilt Laurel, an honorary society of historical fiction authors; the Fellows of the Forest, a naturalist society; and the Companions of the Silver Strings, an order of heroic bards who acted valiantly at risk of their own lives in the service of the church of Oghma. The Oghmanyte faith also has ties with Those Who Harp (the Harpers), an organization working for good against the rise of great powers throughout Faerun.
Dugmaren Brightmantle
The Order of the Lost Tome is a loosely structured fellowship of errant dwarven scholars dedicated to the recover of lost dwarven lore for the benefit of kingdoms and clan holds throughout the Realms. Individual Knights of the Lost Tome usually work alone or in the company of dwarven and nondwarven adventurers unaffiliated with the order. They combine their passion for knowledge and investigative abilities with the martial skills necessary to defeat the current occupants of fallen dwarven strongholds thought to contain examples of and treatises on lost dwarven lore.
If I were going to play a dwarven monk like you discribe, it would probably be from the Order of the Lost Tome. :wink: If you want more info I can probably find some. I've been having a bit of fun digging through some of my books and pdfs looking for it. As far as your last question about just serving knowledge, that would probably be fine. Personally I like having strong ties between my PCs and a deity, which is why I usually play clerics. Good luck.
