Oghma
While the church of Oghma sponsor no military or knightly orders, it spreads its aegis over a countless number of monkish fellowships, scholarly orders of honor, guilds of naturalists and herbalists, and colleges of bardic knowledge. Some of these include the Children of the Passive Voice, an order of learned monks whose members protect many libraries and abbeys; the Order of the Gilt Laurel, an honorary society of historical fiction authors; the Fellows of the Forest, a naturalist society; and the Companions of the Silver Strings, an order of heroic bards who acted valiantly at risk of their own lives in the service of the church of Oghma. The Oghmanyte faith also has ties with Those Who Harp (the Harpers), an organization working for good against the rise of great powers throughout Faerun.
Dugmaren Brightmantle
The Order of the Lost Tome is a loosely structured fellowship of errant dwarven scholars dedicated to the recover of lost dwarven lore for the benefit of kingdoms and clan holds throughout the Realms. Individual Knights of the Lost Tome usually work alone or in the company of dwarven and nondwarven adventurers unaffiliated with the order. They combine their passion for knowledge and investigative abilities with the martial skills necessary to defeat the current occupants of fallen dwarven strongholds thought to contain examples of and treatises on lost dwarven lore.
If I were going to play a dwarven monk like you discribe, it would probably be from the Order of the Lost Tome.

As far as your last question about just serving knowledge, that would probably be fine. Personally I like having strong ties between my PCs and a deity, which is why I usually play clerics.
