I have some trouble reproducing the problem. Was this with or without the Improved Unarmed Strike feat?

With. Unarmed strikes are definitely doing slashing damage. It is a problem with NWN2 apparently, given that it manifests in the single player game as well.

Okay, I worked it out. And it's... bizarre.
The Improved Unarmed Strike feat is not involved. But when a character equips anything in their glove/bracers slot - anything at all - their unarmed damage type changes from bludgeoning to slashing. So when you put gloves on you suddenly can hit zombies with impunity, take them off and the skeletons had better flee.
I've no idea if it's fixable, or whether it's worth the bother to fix.

Interesting... that sounds quite useful for monks even if a bug. Though to be fair, don't certain weapons try to accomplish this already? I'm not well read on monks whatsoever.

Spiked gauntlets allow characters to make "armed" attacks, doing piercing damage. No PnP character should be without them. And I'm sure there are stats for things like brass knuckles or claw weapons.

That might explain it. My PC usually is wearing some fingerless gloves or some such, especially when out and about.
